25 January 2008 Veteran chef wows at cooking expo
A Michelin-star chef has impressed colleagues and audiences at a recent culinary conference in Spain, it has been revealed.
The AFP reports that Spanish chef Ferran Adria appeared at Madrid Fusion 2008, a yearly international culinary conference based on haute cuisine.
At the show, Adria made a blackberry risotto recipe by dropping the fruit into liquid nitrogen, microwaved a parmesan pancake and told onlookers how to make a chocolate bonsai tree.
"He is one of those people who becomes a legend. Ferran Adria revolutionised the world of cooking and today everyone listens to him in awe," Esmeralda Capel, organiser of the event told the AFP.
Meanwhile, Parisian pastry chef Sebastien Gaudard claimed that each time he watched the chef it was like "getting smacked in the face".
Ferran Adria runs a Michelin starred restaurant on the Costa Brava in Spain. He also pioneered culinary foam in an attempt to enhance flavours.
